Granola with Mixed Nuts and Coconut – Bon Appetit RSVP

I may need an intervention. I started making my own granola this year and it’s out of control. If I don’t have some for breakfast, well, it’s not pretty. I can’t concentrate, coffee barely helps and I’m so desperate that I’ve wondered if Cheerios and Craisins on yogurt would satisfy in a pinch. Luckily I’m aware of the need and have done a good job of stocking the granola jar. Yes, a jar…just for my granola. I made Maple Walnut Granola first and loved, loved, loved it. From there I altered a couple of things and was happy with that 2nd batch too. So when I saw that Bon Appetit’s RSVP section had a recipe requested by a reader, well, it wouldn’t do to not make that now, would it? So I did. Ann I am glad. I did have to search a bit for pepitas but part of the fun is trying some unique ingredients and they qualified. Check out RSVP Redux for other blogger entries from Bon Appetit restaurant requests.

This recipe called for browning the nuts in butter and then adding to the oat mixture after it had baked. My experience make that seem both an extra step and a lot of extra calories so I did as I usually do and mixed the nuts with the oats and other ingredients and baked everything together in the oven. I now see great granola recipes all the time.. I’m gonna need another jar.

Mr. RGBistro LOVES granola. And I’ve never gotten around to preparing him any, because so far, buying a scoop from the local farmers’ market is so much easier.

But I’ve officially book-marked this one, because I love every ingredient on the list.

Beautiful photos – love the lighting!

You will never go back and it’s not hard at all…I make a big batch once every week or so in about 30 minutes. Easy peasy.

I’ve been making a lot of homemade granola lately… In fact, I made a batch this afternoon! This recipe is very similar to mine… Except I use maple syrup instead of the honey and sugar. The addition of pumpkin seeds sounds great… I’ll have to hunt some down next time!

I ran out yesterday morning. I almost cried this morning it’s become such a standard now for breakfast; some yogurt and granola. I mix it up each time. I make a walnut and date one with maple syrup and walnut oil and thing I might be doing that this afternoon…thanks for the reminder Jen.

As long as you are still shaving your legs and wearing the proper foundation garments I would not stress about the temptation to make granola. This looks great! Really fresh and flavorful (not the teeth chipped chunk stuff). Must add to my ‘to make’ list. Can I come over for breakfast?

Breakfast and yes, sometimes for dinner. Anytime and I promise to be completely dressed and appropriately shaven. :)

They were a bit of a trial but finally found a supply at Sunflower Market…among a whole bunch of other wonderful granola possibilities. Addictive I tell ya!

I love making granola!! I am the same way when it comes to breakfast, so it is for the best I have this on hand!

Make sure you check out the other recipe linked to…it’s equally wonderful. Walnuts, dates and more.

I’ve been wanting to make my own granola because I buy the house made at Whole Foods and it’s delicious…and comes with a hefty price tag. Thanks for the recipe and I’m loving that browned butter part!

I look forward to hearing your thoughts of the difference if you do; I can imagine Whole Foods is good…but this stuff is more along the lines of addictive!

Oh, my. I think I would have to go with the browned butter step. Browned butter transfers everything to a new taste level and I really like that.
I have been making our own Granola for a while now (mostly Chai scented and also some Allspice Almond Date) and my family is just eating it up in now time. I can hardly keep up with it anymore. We are out again and I may have to try yours with the browned butter step. Thanks, Barb.

I love the idea of browning the nuts in butter…I just don’t want the added calories so go for it, I’m sure it’s a wonderful additional layer of flavor.

I can see myself snacking on this from sun up to sun down! Thanks for posting the recipe Barb.

You can never go wrong with granola! I love the way the pumpkin seeds look with the cranberries.

I love the idea of making my own granola; yet it is not something that I think of doing. Thanks for reminding me.
