Tandoori Chicken with Quinoa

I love the food of India but it’s one thing I always go out for; ingredient lists read like a foreign language to me and I anticipate a lengthy day of shopping at multiple stores to make sure I have everything I need. So I just don’t do it.

I was pleasantly surprised when I saw Katie’s post on Good Life Eats for Tandoori Chicken and the realization I had everything I needed to make this dish NOW; no shopping required. It helped that I had just picked up some Greek yogurt but most surprising to me was the fact that I actually had all the spices on hand to make the mixture the chicken marinates in before grilling.

My plan had been to serve it on a bed of couscous. I just love Israeli or ‘pearl’ couscous but I didn’t seem to have that on hand…and was starting to wonder about my plan when I couldn’t find regular couscous in my pantry either. Quinoa to the rescue!

A recently rediscovered ancient “grain” native to South America, quinoa was once called “the gold of the Incas,” who recognized its value in increasing the stamina of their warriors. This is a new grain to me but it can be used in many of the same ways that couscous is used and I decided to give it whirl…who can’t benefit from having warrior stamina?

I love tandoori chicken and u have made it fantastic, to perfectn and the addition of Quinoa wants me make to try this combi too!

I love how beautifully you made this Barbara; it’s gorgeous! I also love that you served it on quinoa, a grain we do not get here easily {if at all}! This is a great recipe…mmmm!!

Quinoa has become a staple in our house… it’s so much healthier than couscous and I find that it fills me up more than couscous too.

I don’t know if you saw another post I did…but with 4lb packaging from Costco…I’ll be using it a lot too! I love pearl couscous but the regular size is sort of lost on me; I prefer quinoa in so many ways.

I much prefer quinoa so I view it as a happy accident that you didn’t have couscous on hand. And, how random, to have all that- one might even suggest serendipitous.

I agree. As much as I love pearl couscous, this was a perfect solution; meant to be!

I’ve been learning to cook Indian dishes at home and it’s surprising to find that most of it does not consist of “foreign” ingredients–it’s just a mix of spices that I usually stock anyway. This looks delicious by the way–quinoa is my go-to grain. I seriously eat it with everything.

I keep a good selection of spices on hand but would have never put those together for the end result; this was so easy maybe it will open the door for me to make more.
