Easy Cinnamon Rolls

My friend Ken at Hungry Rabbit just posted this recipe a couple of days ago. One of those mornings when I was struggling with a breakfast decision. Should it be toast or Cheerios; yogurt or an English muffin. Ken…why must you tease me like that??

But the truth is, I had in mind making a breakfast dish to take to a friend of mine’s daughter. She and her husband had their first baby last week and she had just returned home from the hospital. I thought the young family might enjoy having breakfast ready for them for the weekend. Ken made this sound so easy I probably could have made it the morning of but did prepare it the night before. I think they should be called Magical Cinnamon Rolls…if I didn’t know going in that they didn’t have yeast and require time to proof and rise…I would have never guessed it. Topping them off is a smooth cream cheese and buttermilk glaze. It really is a moment of Oh. My. Yum.

The only dilemma I had was in the giving away of the finished product was that I didn’t get to try them myself so thought it only fair that I do them again…yes, for me! I have some wonderful testers friends near me that I have a hotline to, you know, the ‘I’ve got something I need help eating that I made for the blog’ urgent call. This was particularly easy for them; I had the rolls done and the photo taken and really, all they had to do was sample the goods!

Ken’s version was done without pecans..but I had plenty and did add them. I also only had an 8″ cake pan and worried it might overflow so I used a 9″ square pan and had three rows. I was going to cut them into 9 sections though Ken’s  recipe called for 8 but those rolls would have been too narrow to manage getting from the table to the pan so I did three deep on the outside and just two on the inside row and it came out perfect both times. I also rolled my dough a bit larger the 2nd time; adding that 1/2 cup of pecans was too much for a 12X8 inch piece of dough to get around!

Don’t wait until you have time to make these…they don’t take THAT much time!

I know! No one can…the don’t just look like yeast rolls but also have a great texture.

Wow! I love the idea of cinnamon rolls, but please…will probably never make them… But these, I can get behind! Really no yeast??? Planning to give them a try! Thanks for posting!

I discovered a recipe very similar to this from America’s Test Kitchen and it is a HUGE hit when I make it. It is almost a miracle that in about an hour you can have the most delicious cinnamon buns in your mouth. I’m going to try this version. Thanks for sharing this recipe.

Thanks for sharing and testing this no yeast cinnamon bun recipe for us. I wish we lived closer so we could share. Generally, I find the pecans are the little treasures in cinnamon buns/rolls – so I’ll be adding them too.

No proofing and absolutely delicious? I will *so* have to give these a try. The recipe I use now is tasty, but the process is soooooo looooong.

Do try them and let me know what you think. I was prepared to have a lot of complaints but that dough kneading business does the trick of giving them anything but a cake like texture.

I think I can smell those all the way from my couch. Nothing says Sunday morning like cinnamon rolls right out of the oven. And no yeast recipes are what I need since I manage to ruin EVERYTHING with yeast involved!!

Lovely and just in time. My 11 year old has “informed” me that we are hosting a sleepover this weekend and that she wants to make something other than French Toast or Pancakes. I’m sure these will fit the bill; although, they will have to be sans pecans.

I really can’t count how many times I have left comment on cinnamon buns post all over the internet that I want I want. I really want but I’m afraid I’ll make it every other day and eat it all if I made it at home. Now you see, no yeast is alluring me more than ever.

Congrats to the new parents! They must have been delighted when you showed up with these, how thoughtful! Great that you made yourself a batch later…I’d have trouble getting them out of my kitchen too once that lovely aroma started filling up the air.

I love cinnamon rolls and have a great recipe for them…but it uses yeast and takes a long time to make. These look wonderful and very quick to make. I’ve never made a topping for the rolls but just may try this one. Thanks for providing a quick recipe for such a great morning delight!

NO YEAST???? Oh wow I don’t believe it! Look how tall and fluffy! Oh who should I kiss, you or Ken? This is a recipe made in heaven! How I love cinnamon buns but I never make them because they are never ready for breakfast. Splendid! They look amazing!
