I love this dish; really simple to make yet a great summer meal. I only wrapped the larger scallops and left the small ones plain; better to satisfy a variety of people and their variety of tastes!
My friends love making fun of me now that I’m putting recipes on a blog. Every meal requires that I remember to take a photo first and sometimes they are the ones reminding me!
I make real meals for real people so food styling is not a big component. I’m lucky to get a quick picture before food is plated to be eaten and done before it gets cold and this night was no exception. Just managed to take a quick picture of the scallops that were still on the skewers!
Ingredients
1/4 c. bourbon
1/4 c. chopped scallions
2 tbsp. maple syrup
1 tbsp. soy sauce
2 tsp. Dijon mustard
1/4 tsp. ground pepper
1 lb. sea scallops
Approx 1/4 lb. bacon; slices cut in half (I didn’t use this much because I did not wrap some of the smaller scallops).
- In a bowl, combine the bourbon, scallions, maple syrup, soy sauce, mustard, and pepper. Stir in the scallops. Cover and refrigerate for 1 hour.
- Prepare the grill or heat the broiler. Wrap the scallops in bacon and thread on skewers. Grill or broil 4 inches from the heat, turning once, until the bacon is crisp and the scallops are opaque, about 5-7 minutes depending on size of scallops.
