Cheddar Gougeres
I get together with a group of friends for brunch occasionally; we all love to cook and so somewhat sarcastically call ourselves ‘The Martha’s’ – our last outing included these tasty little puffs.
(Makes 48)
1 cup water
8 tbsp unsalted butter, cut in small pieces
1 cup all-purpose flour
1/2 tsp salt
1 tsp dry mustard
4 eggs
1 cup shredded Cheddar cheese
Heat oven to 400°F. In medium saucepan heat butter with 1 cup water until melted. Add flour, salt and dry mustard; stir vigorously until mixture pulls away from sides.
Remove from heat. With wooden spoon stir in eggs one at a time, then cheese. Drop by tablespoonful onto ungreased baking sheets. Bake 20-25 min., or until golden. Serve warm.
I’ve had these plain and also split with a filling of carmelized onion made with olive oil, white onions, sugar and balsamic vinegar…really yummy too!
