Blueberry Coffee Cake

Blueberry Coffee Cake

Another great recipe from my friend Stacy Hatch. It’s ‘just’ a blueberry coffee cake; sometimes called Blueberry Buckle but it has just the right blend of fruit and crunch, perfect!

Ingredients

3/4 C sugar
1/4 C soft butter
1 egg
1/2 C plus 1 Tbsp. milk
2 C blueberries
2 C flour
1 1/2 tsp. baking powder
1/2 tsp. salt

Topping:
1 1/2 C sugar
1/3 C flour
1/4 C butter

Mix 3/4 C sugar, soft butter and egg. Sift together 2 cups flour, baking powder and salt. Add flour mix  and milk (alternating). Fold in blueberries. Put in greased 8X8 or 9X9 pan.

Mix  the sugar, flour, and butter together with pastry blender until  coarse. Sprinkle on top of batter.

Bake in preheated 375 degree oven for 45-60 minutes. Makes 6-8 servings.
